Those skillet taters look great! How long do cook after flipping them?

I have found you have to eyeball it. They got pretty dark before I flipped them, so they only took about 6 more minutes. When I have made then in the oven on a dark rimmed sheet, they have taken about 15 minutes on each side. I wish the time was more consistent, but cooking to the right color gives me the best results.

I'm pretty sure their truck goes around at least the counties surrounding Fort Wayne. The bar is on the NE side of town. They don't have the wraps at the bar, but you get the tip basket on a pile of fries anyway.
