To make a long story short, I finished my UDS build last week. I was able to season it, but unfortunately the wife and I had to go out of town all weekend so I was unable to smoke anything on my new toy.

When we got back today, we ran across deal on select ribeye. We were both hungry and I knew these would cook fairly quickly, so I fired up the UDS and cooked them at 270 degrees. Just used SPOG for seasoning.

I was pleased with the results, but the internal temp got away from me a bit (I got sidetracked on another project) so I was unable to reverse sear. The IT was 135 degrees before I realized it. I'll definitely do that next time, but these turned out pretty darn good for a last minute cook.

PS - Please forgive me for not doing a fatty for the first UDS cook :thumb:
