I need to finish my brisket in the oven.
I have been smoking on an offset and have kept the temp at around 250-275. Now, I have to finish it in the oven. Should the indoor oven temp be different than the offset since there is no air flow in the oven?
thanks

The oven temp will be determined by your desired finish time.... This is largely unscientific and gets based on experience. If you'd like to finish about the same time then use the same temperature. Use a lower temp for a longer finish time and remember you can always hold it once it gets done.
