There are lots of good analog thermos out there; I like and use Tru-Tel but my question is not about brand. Most of the good BBQ analogs like the Tru-Tel go up to 450* or 500*, I've seen a few that have a 600*-750* max temp.

What happens to this type of thermo when you exceed the max temp?

I'm planning on cooking some pizzas and hoping to cook at temps that would "more-than-peg" my analog thermos (Weber dome thermos & Tru-Tels). Do I need to worry about them?

I pegged the factory thermo on my chargriller once making steaks.. And I mean really pegged it (I like a good crust..) its never read correctly since, BUT it is a very cheap thermo. My River country are adjustable, so I would think I could just retune them if they got out of whack?
