Couple of Pheasants

I like pheasant. Last one I did was slathered in mayo, seasoned and hung in the pit barrel Jr. Came out really good.

That's interesting because I thought about a mayo slather cook and the boys asked about smoking.

This guy has some good info and recipes for pheasant (and other game). My wife loves pheasant. In recent years I've been hanging my birds and it does improve the meat. He has an excellent article on hanging birds, also.

I will have to check this out for sure. The wife likes pheasant but, seeing the birds and such she is a pass...lol
