A friend's niece got married on the beach last weekend and I was asked to smoke up some "Q" for the big event.
In summary, I smoked one brisket for sliced and burnt ends, five butts/picnic hams for pulled pork, six chickens for pulled chicken, six racks of St. Louis ribs, and a 2x batch of Wampus beans.
The flavor profiles of everything was spot on for my techniques and the wedding party was elated with their meal.
