I decided to cook something a bit more on the healthy side this evening for dinner. I had some Sockeye salmon fillets, a perfect choice since the Mrs. doesn’t like seafood and she was out for the evening.
The Sockeye, aka “Red” is fantastic to grill due to the meat texture and the general thickness of the fillets. I seasoned the fillet with a spicy salmon rub along with a coating of EVO. Cooked on the BGE for about 2 minutes per side at 400F.
Finally served with fresh vegetables, a glass of Pinot Noir and my heart thanked me.
