Two chucks rubbed with EVOO and Oak Ridge Santa Maria. Seared over the vortex with a chunk of pecan burning on the side.
Into the dutch oven where I added a chopped onion, 4 cloves minced garlic, 1 heaping tbsp of Santa Maria rub and 48oz beef broth. And 12oz beer (*cant forget the most important ingredient).
Slow simmered on my propane fryer for 4 hrs until meat fell apart. I added some flour and browning sauce for a hearty brown gravy.
Toasted French bread. Po Boy Sandwich with onions, lettuce,tomato,and mayo. A side of spicy sweet pickle chips and sport peppers.
