Did a whole beef tenderloin for Christmas - day before I marinated in Dales for about 30 minutes - then applied a garlic herb paste and let it rest overnight



Thru it on my Blue Collar Smoker at 250 - took about 1:45 to get to an internal temp of 120 - then rested and seared on my weber kettle for 2 minutes a side

Also smoked some crab cakes, a twice baked potato casserole and cream corn





 
Everything looks really good, Never thought of marinating it before. How were the results?

Taste was spot on - I generally don’t think tenderloin has a lot of flavor - so the 30-40 minutes in the Dales marinade and the garlic herb paste did the trick - all guests approved !
