First try on the Trompo.

Chicken Schwarma - boneless thighs marinaded in EVOO, lemon juice, lemon zest, cumin, coriander, smoked paprika, turmeric, ground cinnamon and LOTS of garlic.

I spun the marinade up in a food processor yesterday to a smooth mixture, and let it get happy overnight before I marinaded the meat this morning for 6 hours.

On the BGE with a chunk of apple wood at 350 indirect to an IT of 170. Took about two and half hours.

It's resting now. I'm going to shave off slices onto tortillas for dinner.

Dinner is going to rock! :-D

Looking good!

I'm a recent convert to home cooking chicken shawarma. Haven't tried this method...have been using skewers instead. Yours looks fabulous!

Looks fantastic, John!
Thank you for the kind comment on my fish cook too. :-D
