This is a chicken I prepped a couple of years ago while living in France. Their chickens are all natural, free-range, and delicious.
I fully deboned it and trussed it up then cooked it hot & fast.
Might need to do another here soon.

That is some seriously yellow skin. I always wondered how the chinese takeout chicken wings had such a yellow color on the skin, i always assumed they used yellow food coloring but i tried and yellow food coloring doesnt seem to absorb very much into chicken skin. They must be using good quality chicken which i find hard to believe.
 
That looks awesome. I don't have the knife skills, but I am willing to try. Worse case is it is badly butchered, but I can still roll it up and cook it:) Great pic. Thank you.
