fired up the large egg with cherry and pecan chunks for the smoke.

Din't have time to marinade the birds. Coated with Yardbird and smoked at 325*. Finished at 425* for about 15 min. Armadillo eggs had pepper jack cheese. Bite sized. Practice for a comp appetizer. They didn't last long.

Came out juicy and tasty. Had to use 2 napkins when I ate a breast.
 
My favorite place to get natural chicken sells halves. I'll try to get 3 or 4 right halves for my comp on Oct 3. They look a little better in the turn in box. And are easier for judges to cut the breast if they hold the knife in thier right hand.:cool:
