My youngest son (and chef in training) requested Salmon for his birthday dinner last night.

I picked up some wild caught sockeye salmon filets, laid them on cedar planks, seasoned with Garlicky Lemon salt and dressed with lemon slices

Onto the Weber Performer running oak lump for about 20 minutes. While it was cooking I prepared the Pistachio Gremolata


½ cup chopped pistachios
¼ cup chopped fresh parsley
Juice of 1 lemon
½ tbsp minced garlic
1 tsp Garlicky Lemon Salt
Olive oil

All this went into a mini food processor and then went on top of the Salmon as it was finishing up on the grill.

I have a bunch of planks and never use them. I'm guessing I'm missing out on something.
