Been a couple of years for brisket, let's see what happens.
I cleaned and painted the drum this winter. I added an aluminum ring so my Weber lid can fit.
Filled my crude basket with K Comp and Royal Oak. Used an empty metal coffee can with bottom removed and put the Pecan chunks close to the center.
Pour the lit 15 coals into that cylinder, then I'll pull out the can and leave the small fire in the middle.
I'm using the top rack for the first time ever, since now I can use a Weber lid. I use to use the flat lid and the lower rack. Let's see how this turns out.
