btcg, I don't recall how long it cooked before foiling it. But, I cooked it with a chucky so it was cooking without foil longer than it probably needed.

got14u, I have thought about cooking one after splitting the two pieces. But, haven't done it. One day perhaps.
 
Holy Cr@p, only 2 hrs in the smoke!!? Don't tell the Low and Slow guys. The pics show you have a good handle on this method.

Low and slow is a great method and I have seen some great results. But, I just don't want to baby sit a brisket for 12 - 14 hours, especially when I can get good results with this method.
