I was able to get away for a week of camping recently. Decided to make Huevos Encobijados again. They are becoming a favorite of mine.
This is my first thead on the new site. Hopefully I'll figure out how to get it put together. lol

I made my tortillas at home to save time.

heated some bacon drippin's first..

added the peppers, onions, garlic...

then the diced tomatoes..

Let them simmer til tender before adding a good shot of Michelada..

seasoned to taste with salt, pepper, mexican oregano..
then let it simmer on the fire..

poured one egg inside each tortilla...

into the pan and covered with the hot sauce...then let them simmer for around 7 minutes to set the eggs.

I like to use the corn maseca in the gold bag. The tortillas "puff" up better.
Depending on how many I want to make... it just takes the maseca, a pinch or two of salt and warm water. I let the dough sit for about 20 minutes before making the tortillas.

they take about 2 minutes on a hot griddle...

I make a slit in them while they are still warm. This time I just wrapped them and packed them to the lake for breakfast the next day.
