I think my next smoke has to be a pork butt. then when i get the confidence I will attempt a brisket. my favorite place for brisket closed :icon_sad

All but (1) of my pork butts have turned out great, so that means it must be very easy to do. :-D My brisket trial and error has not been that bad. They were all enjoyable, but each one is getting better.

Good luck with your smoke and I have a feeling you will have a new favorite brisket spot before long!
