Thermapen (I have two)
Anova sous vide cooker (up to three!) Not directly BBQ, but I often use them in conjunction with one or more outdoor grills or smokers.

Much lower:
AMaze-N-Pellet Smoker
Weed burner with push button igniter (Harbor Freight) for light bigger fires and degreasing.
Bernzomatic TS-8000 for lighting smaller fires, lightning the pellets in the AMNPS, and creme brûlée.
Several heavy duty commercial full size trays and full size cooling racks.

I track pit temp with a HeaterMeter an K type thermocouples which was over $100 all in, but if I didn’t have that, an accurate pit temp thermometer would be high on my list.
 
Thermopop. More durable than thermopen bc it has no moving parts and has a sheath for the entire probe. I went with 2 pops after my pen crapped out, and I’ll never go back.
