Just a though.... Has anybody ever used the leftover beer/drippings along with pan drippings to make gravy???

No, but I don't why you couldn't. The water should evaporate off leaving the gravy base behind for some interesting gravy.

I never tried either. I wouldn't see why you couldn't. I never found a need though. Chicken was always very juicy and tender and gone in no time :-D
