I made these a bit over two years ago.
Josh and Legendary hog gave me some pointers
Taco was quickly deep fried,holy moly, what a difference.
I used what was available at the moment, things are still restricted a bit.

Shank was smoked till pullable, added to all the extra browned ground beef, charred peppers.
Red only, green not available.
Jalapeno etc etc
Was a very delicious dinner, deep frying changed the taco so much.

I'm starting to hate this board because of the beautiful food pics that always make me hungry.
 
That looks great Titch - I keep looking at the pictures and I love the pullback on the bone.

If those were a corn masa based tortilla, I would call that a righteous Chalupa. But I can honestly say I have had tacos that look exactly like that from some fantastic taquerias.

Love the charcoal flame roasted chopped peppers, in my opinion the only way to prepare and serve!
