Taking the brisket out of the drink today that started 2 weeks back. So might as well cook one of the 4.

Might do another batch as I have 2 frozen normal briskets in the freezer, 6 now corned and 2 raw normal briskets in the fridge. Since I prefer pastrami, I might just toss those 2 in later today :-D.

Into the pitboss at 300 degrees around 9am

Holy over the top Jason! 8 corned briskies? You must have a walk-in freezer, lol. Pastrami is looking good. Do you finish it on the smoker or do a wet finish?

Just pastramied a whole brisket last weekend after a couple week swim. Did a pressure finish on it.
 
Looks good - Just did 12 corned beef Pastrami. Whole brisket would give bigger slices but the price on corned beef was right.
 
Looks perfect. Now....when's the next brisket sale? Your running a little low.

Yeah i add water in the pan when I wrap to give it a kind of steam.
