As you all maybe aware that we are just getting started into catering and before I make my final quote on the amounts does this sound about right with you.
This is for a wedding shower party to serve 70 adults – no children at this event
Brisket – 3 - 12lb. whole packers
Chicken – 4 whole large birds to make pulled BBQ chicken
Spare Ribs – 6 full racks

Your brisket is good. Not nearly enough chicken & only 1 bone per guest?
 
I believe if you are serving ribs, you need at least two full size ribs, whether spares or baby backs, two generous ribs per serving. Brisket is good at .33 lb to .5 lb per person. Chicken should be about the same, maybe .33 lb per person.
 
12 racks. I just did a party for 60 adults and cut each rib in half, guest seemed to like them more bite sized. Except for some of the teens.
