Wasn't sure what to call this.
Brethren Inthewoods so kindly shared this recipe recently and I wanted to give it a try.
Visited my favorite tortilla lady, picked up some fresh ones. I didn't have time to make my own.
smoked some chicken thighs, shredded the meat and fried the skins til crisp..
chopped some of my Hatch chiles (from the freezer)
fried bacon, chopped onions and scallions...
grabbed a bag of chili cheese chips..
ready for the build...
Started with the tortillas...
next came the smoked chicken and chopped Hatch chiles...
onions and scallions...
fried smoked chicken skins and crisp bacon..
shredded cheese and Chili Cheese Chips...
covered the center and folded in the sides...
(Not sure if I did this right but it worked.)
I placed a rack on top to hold it in place while heating..
Made the dipping sauce... queso with chili garlic sauce...
cut off a corner...
served with the dippin' sauce and a cold beer...
Planned on having a slice for breakfast this morning, so I slapped an egg on top and called er good.
The quesadilla was insanely good! lol The chili cheese chips, crisp chicken skin and bacon added a nice crunch.
I had thought about cooking it in a smoker but the smoked chicken had enough flavor, I didn't need to.
Thanks again to Inthewoods for sharing the recipe. I'll be making this again in the future!
I was able to divide the quesadilla into several portions, wrap and freeze them for future, quick meals.
