Getting started on my 4th of July cook
Starting a full pork shoulder and a brisket tonight, a little disappointed in the shoulder, I thought it would be in the 15 lb range but its only 9 lbs and feels like mostly bone, I hope I dont run out of pulled pork tomorrow.
Tomorrow I have 6 racks of St Louis spares and some pork belly burnt ends to put on. Also planning on some Wampus baked beans and SmokinJons Mac and Cheese, hoping to eat around 4pm tomorrow so hopefully all goes well!
Smoking with about 12 lb of chef select and 3 lbs of pecan
