I have a function where it requires me to cook 250 racks of ribs. This function is 4.5hrs away. My smoker can only handle 125 racks at a time.
I am looking for suggestions on cooking Half before travel, and the other half on site. Can I cook, place in pan, and slowly reheat?
I have a food trailer, with a warmer, and oven in it.
Looking for advice to make things easier, without compromising end product to much.
