2 lbs of ground Pork??

Hi All
I had 7 lbs of coarse ground pork, 5 were used for Italian sausage, so I have 2lbs left.
What to do with the 2lbs? My first thought was to make bratwurst,every time I made bratwurst, I didn't like the way they tasted.
So any ideas on what to do with the 2 lbs ?

Pork burgers! I have an old recipe from Blues Hog that is great! I’ll look for it.
 
Add some ground beef and make some German Frickadellen, plenty of recipes on the 'net.
Fantastic taste - hot or cold!!

Chef Willies brats

5 pounds of pork cushion or shoulder
1 tablespoon kosher salt
2 teaspoons ground white pepper
1 teaspoon dried marjoram
1/2 teaspoon ground caraway seed
1/2 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1/4 teaspoon ground ginger
1 tablespoon granulated garlic
1 teaspoon of Cure #1
1 cup of NFDM
1 cup of milk

season with fennel seeds, garlic powder, onion powder, salt and pepper.

2 pounds will stuff 8-10 large Portobello mushrooms.

put them in a roasting over a bed of sliced peppers and onions and a few smashed garlic cloves. I do 4 bell peppers and 3 Vidalia onions.

smoke for 2 hours at 275 then top with chunky tomato sauce and mozzarella cheese and smoke an additional hour at 350.

this is my go-to for any extra sausage or ground pork.
