I volunteered for “Operation Turkey” on Tuesday which is a Texas organization feeding Thanksgiving dinner to homeless and needy folks. My task was delivering donated Turkeys, but we ended up having more birds than we could cook in the FEC-500 smoker they had borrowed, so my eleven year old who was with me shouts out “My daddy has a bunch of smokers at home”!

So….....I spent all day yesterday prepping and smoking 14 Turkey’s in four different cookers at the same time. Eight in my FEC-100, two in my PBC, two in my Weber 26", and two more in my convection ovens. Quite an adventure in timing as they all cook differently. I also just happened to have three new jars of Plowboys Yardbird Rub in my pantry, so they all got a liberal dose. After the Turkeys were all finished, I managed to talk my wife into helping me break them down and package into hotel pans which were delivered late last night.

Felt great doing something for others, and hopefully my children will pick up on that. I have one more bird left to cook for my family today, and I may just make a ham instead!

FEC-100 with Eight Large Turkeys (about 130 lbs) It took almost 2.5 hours to come up to 225 degrees with cold birds inside, and another two hours to hit the 310 degrees I was shooting for. To speed up the process I finished some of these in my convection ovens at 350 and they turned out really great!

Turkeys ready to be broken down and packaged in disposable hotel pans. Breaking them down took a long time, even though my wife and I both have lots of practice!

That's a great job you did. You did something very good. The Long Island Brethren volunteer to cook Thanksgiving dinners for the Babylon Breast Cancer Society every year. This year we cooked 83 complete Turkey dinners so I can appreciate what you're doing! It rained half of the day but we still got it done. I "Kelvinized" 8 turkeys for the cause.
