So we got some St. Louis spares for $1.99 (Aldi's) on sale this week, rubbed up with "Rib Rack Pork"
Finished in 1:55, no spritz, glaze or sauce

Looks good. I'm also doing chicken today...later. I am finally giving that State Fair chicken sauce a shot after all the hearing of it here. It better not disappoint.

Erik, right now low and slow on the WSM 18" but lately more hot and fast on the WSM 22".
There has been a new pellet pooper in the garage for 3 years going up for sale.
