I bought some briskets at a good price ( $1.97lb) recently and decided to grind one into burger for quick meals.

pressure canned at 12lbs of pressure for 75min. (pints)

I really like it. Now I don't have an excuse for skipping meals, this will be handy for hot quick meals this winter. :-D

I did make pastrami with 2 briskets and Guam style smoked brisket with another one. Will post cooks if I can get my photos uploaded.

Never tried pressure cooker canning but dang that looks good. Have done some water bath but just pickles, jalapenos and tomato's. Never tried canning beef but so tried of trying to brown store bought ground beef that you have to stop half way through to drain the water.

Thanks Randall! That Guam style stuff is pretty tasty. I just made a big batch for deer rifle season.

I bet your home canned pickles and peppers are outstanding!
I mostly pressure can meat, venison, chickens that have stopped laying or meat chickens. I can pork and beef too... also like to have home canned soups and stews for a quick meal.
Sometimes I don't slow down long enough to eat during the day and it's nice to have a quick hot meal at night. :-D

Since the prices I've been getting for choice brisket has been MUCH lower than any other cut of beef I've been grinding it for burgers and enjoy it quite a bit. I've only been grinding the flats and hoarding the points for one big point only smoke later.


I haven't even thought about pressure cooker canning as I've been eating it fresh. But, seeing YOUR post and knowing that I have a fairly new and shiny pressure cooker.....I NEED to give this a whirl. We had pssketti the other day using the ground brisket and it was a big hit with her. So, this needs to be done.:thumb:
