I've noticed that everyone uses an Aluminium food tray to put the veg and chuck steak into. Is there any reason for using this sort of food tray rather than any other? I guess these trays heat quickly and don't hold heat, but I am wondering about using a cast iron roasting pan or even a BBQ safe ceramic pan this weekend.

The only issue I can see with cast iron or Ceramic is that the cooking time might increase while it gets up to temp, but am I overlooking anything else?

Clean up for me...I HATE having to scrub something that has spent hours in the smoker!
 
I use a dutch oven myself but the ease of clean up makes the disposable ones nice.
 
I don't have a cast iron pot big enough for PSB, so I stick with the alum pans for the time being.
 
I don't like to cook in aluminum as it is reactive and can cause off flavors. I bought 2 half size steam pans, 4 inches deep, from Sam's Club for like $20 for the 2.
