I finally joined the flat top movement at my house (I’ve had a Camp chef in the camper and love it) and I’ve been playing around some. I kind of wish I had seen the Blackstone premier with the cart and the drawers and stuff though...

Cheese steak with some creekstone farms choice ribeyes...lacking in flavor imo...need to slice much much thinner next time...maybe bust out the sliced

Fun times ahead! I’ll try and post some more pics and thoughts as I get to know the M1...after the seasoning burn tonight will through some of these on (figured I ordered a Texas pit I just as well order some Elgin Texas sausage?!)

Sweet toys!

On a side note, I was shocked at how heavy the M1 is. It took me and a buddy and everything we had to get it up two stairs onto my deck (I’m 6’1” and 250...football build, and buddy was 82nd airborne back in the day...so we can move some weight). This thing is far, far more substantial than my Yoder or Memphis Elite was (which were quite easily moved into the deck).

The build quality and craftsmanship is very high on the M1. Attention to detail is very good. All in all, it actually seems like a good value for the money. It does draft quite strong so that’s a good sign. I love the adjustable height charcoal tray. Will see how it goes!

What is that cart? Looks pretty sweet



That is a M1 medium size table. It is a work of art actually. Very substantial and build quality is through the roof. It should last 50 years I’d think.

Congrats!! Love it... such a sweet setup. Hope you, and your family/friends enjoy many many amazing meals to come from those fine cookers. Oh yeah, speaking of M1 weight, the last time I lifted the M1, it took 2 regular guys and 2 professional movers... and we were hurting by the time we lifted it into the back of a truck. It’s a freaking beast!
 
So by the time I got home from boys basketball practice, my fire was out in the firebox so I fired up a chimney of lump and used the charcoal grate. Put a split of oak and started the sausages indirect for about 15 minutes...then went direct (with grate at lowest level) and the sausages were so juicy it was way too much...threw on the extended grate and then raised the charcoal grate a bit and basically finished them off Santa Maria style.

Gonna take some getting used to the M1 for sure, but the sausages were a major hit. I think I ordered 10 packages of them and they won’t go to waste that’s for sure. Very, very good stuff

Are those local to you? If not, definitely try Slovacek sausage. Another really good option and right now, my favorite. Their Jalapeno Cheese Kolaches are the BEST! I can't get my car to drive past their place in West, Tx so, every trip to Austin or Lockhart requires a mandatory pit stop at their place on I-35.

I’m in Virginia so I ordered these. I will give slovacek a try. Thanks for the info!
