Just another camp breakfast.
My "kitchen" for a week.
I make this a lot using pork, beef or venison. Had an elk roast with me this time and wanted to give it a try.
heating water for the grits and a skillet for the elk...
scored the elk roast while visiting relatives...
sliced and seasoned...
floured and fried...
working on the grits and letting the elk catch some smoke...
sauteed onions, scallions, garlic and peppers in the elk drippin's..
added flour, then beef stock and seasonings...
cheese in the grit and called er good.
I didn't simmer the elk in the "gravy" this time. I served it on the side...
topped with crisp bacon...
I think I like elk better than beef.
Not a fancy breakfast but it was good at the time.
