Cooked a Complete Breakfast on a Weber 26 Without Any Pans

I am absolutely in love with my new Weber 26 carbon steel griddle setup.

I have never owned a blackstone or any other griddle and so this was my first ever attempt at making breakfast on a griddle. I was super nervous to do eggs and pancakes but decided to take the plunge.

Absolute blast. This carbon steel is incredible. So easy to season and truly non-stick if you use it properly. Iā€™m having a blast with this setup.

Step 1: Bacon and Hashbrowns down first
Step 2: Thoroughly clean and re-grease
Step 3: homemade authentic Alaskan sourdough pancakes
Step 4: 2-egg meat and cheese omelettes that I WAAAAAY overstuffed šŸ˜‚:heh:

What temp was the surface of the griddle - just started experimenting with my griddle over charcoal - still trying to figure the right amount of charcoal to put under the griddle
 
Great job.
A charcoal fired griddle is a challenge since you can't just adjust the temp with a knob. You'll learn where the hot spots are and use that to your advantage. Or else you'll adjust how you spread the coals to minimize hot spots.
If I can make it work on the 22, the 26 would be fantastic. Not easy, but lot's more fun.
 
Looks great, omelets are easy to make on a griddle, I cheat sometimes and use egg beaters, I always love smoke on food but the wife not so much. the flat top omelets' are not your fluffy air infused waffle house version, just good eggs cooked done
