Some folks coming over today so got a corned butt out of the freezer along with one of the turkeys I bought around Thanksgiving.

Did a random injection for this turkey and injected 2 days ago then did a dry brine. It cam out really think so will probably leave some amazing staining on the meat. Also the color is just simply amazing as it looks like something a baby might expel from their body so I'm pretty excited about this :biggrin1:

Looking good I have 2 corned Brisket flats- about 8lbs total on the Egg to make Pastrami to then slice freeze and give to my brother and sister for X Mas Looking forward to your cook Jason they always are good Where is the Jr Pitmaster
