Living in California with a large Mexican population, Tamales are a great Christmas holiday time treat. We are fortunate to be friends with several Hispanic families that give us fresh tamales which are usually too warm to eat. They are so delicious.
 
Here too, and yeah nothing makes homemade tortillas taste better than lard. :heh:

Yes, That's what we use in our tortillas too. Much better than shortening and they stay fresh longer, besides having a better flavor.:thumb:

Made 3 dozen today but still have more masa left. I didn't put enough chucks in the water to soften and they need that for about 2 hours so it's not possible to just grab some more and fill them. I will make another batch soon with a different filling. We like bean tamales too! Thanks for looking!!

Nice cook Mike! And yeah, that is how I grew up eating tamales is with chili or queso. Don't taste right without it to me...

My wife and I both like chicken tamales. I've got 3 leg quarters and some breasts boiled and marinating overnight. I put the chicken in a boiling pot with salt, onions and garlic. Strained the liquid and chopped the onion and garlic and added it to the shredded chicken along with a can of rotel tomatoes. Added Plowboy's Yardbird, black pepper and comino. Saved the boiling liquid and will use it in the masa recipe, along with some water, to give added flavor to the masa. Wish me luck! Will keep you posted.:grin:
Only issue I see here is you aren't making enough of them!!
