I wrap mine in Home depot silver bubble wrap and it works wonderfully. I often have seen my UDS, after an all nighter, smokin away in the morning with a foot of snow on top. That bubble wrap is going onto its fourth season.

I've done several winter cooks on my UDS. Keep it out of the wind and under an over hang if possible. I've read of others using welding blankets to insulate a UDS
 
I have no problems in steamy the steamy teens keeping 250. No blankets, no insulation, just charcoal and wood.

There is a picture of someone smoking in single digits around here somewhere.
