Hey there! I thought not teaching summer school this year would make it the summer of me, but man things have been hectic. Haven't posted much, but definitely lurking around.

This happened the past weekend when me and a buddy of mine smoked a whole hog for his daughter's graduation party. It was alot of fun and a huge hit.

I made some cheddar jalapeno Texas hotlinks for it as well.

Huge thanks to our buddy Phil Wingo of Pork Mafia who lent us his Alveron cooker, which was a dream to work with.

Hog stats: 176lbs dressed, purchased from Grant Meat Packing in Melrose Park, IL

Nice looking cook you all had there. A great way to celebrate the special occasion.

We ended up letting it ride for about 26 hours. We went super low and slow. This was mostly due to the fact that my buddy's wife drew the line at keeping the hog in a bath tub filled with ice. :laugh: Since the packing plant closed at 1:00pm, we got it back to his place prepped it and threw it right on.
 
This is a bucket list thing for me. There's a lot of reasons it won't happen for me, but I love the idea of it.
