Carolina Treet is a great condiment sauce for pulled pork as well IMO.

A large hamburger bun, mustard and vinegar based slaw with dill pickle and onion in it, and a really good vinegar based thin sauce from a local BBQ joint. To me, it is a perfect sandwich.
 
I like a mayo based slaw on the pork sando.

Also, pickled jalapenos, not the store bought kind. Those are kind of gross.

Just slice up some jalapenos, cram them in a jar, and immerse in white wine vinegar (5% cheap chit you get at the store) with a pinch of sugar. Throw that jar of bastards in the fridge and it will be pickled in an hour or so and keep forever (or until you eat them all, which for me takes about a couple weeks).

Bonus points: make a cocktail with the brine later on. Bloody mary or if you are feeling bold, weird ass martini.
