Using up Assorted Leftovers

Using up leftovers from the week.

Sourdough Sandwich Bread
Top Round Roast
Various Cheeses
Mashed Potatoes
Bacon

Kinda like an episode of Chopped, only easier.

So, Grilled Cheese w/ Top Round on Sourdough is underway -



Trying to get Sourdough bread to brown is almost futile. I actually had to look up why this was, it's due to the low sugar content in the bread. It did brown up somewhat eventually -



I made use of an older Chef John video for Mashed Potato Puffs.

Make a quick dough in a skillet (flour, butter, water), add an egg once the dough comes together and the mixture cools. Mix with the leftover potatoes and crumbled bacon. I dusted the tops with Smoked Paprika. Bake in a muffin pan in a 450F oven. These could also be deep fried if you prefer -





Leftover Lunch is served -







Not the most exciting use of leftovers but it made for a tasty lunch. These Baked Potato Puffs were excellent. A bit of crispiness on the outside, pillowy soft potato inside.

I was thinking the same. Cheese or perhaps a bit of green onion would be a nice addition.
