Despite being a long-time member, I've never posted pics of my cooks. I've only taken pictures of one previous cook, and that was 7 years ago when I first got my Rec Tec. Well, I reckon if I'm going to hang around here, I need to give this a try...Sorry, no pics of the progress, just the end result. Baby steps....
The grocery store had some thick bone-in pork chops on sale. I smoked 2 of them on the Fornetto Basso (first cook on it). I wet brined them for 2.5 hours in apple juice, brown sugar, salt, and John Henry's pecan rub. Removed from brine, more rub, smoked at 250 over lump oak charcoal and cherry chunks. At 140 internal, onto the MB560 for a too-quick sear (I should have done the sear earlier than 140 IT). The Rec Tec took care of the creamed corn and finished the sweet potato & onion skillet. It don't look like much compared to what y'all make, but it tasted alright.
