The local DoD Commissary had beef bones on sale (a rare event) when I visited on Friday. :shock: I bought 4-5 packages with all but one going in the freezer.

Here's the recipe I've used over the last 2-3 attempts

I soaked the bones in salt water overnight to draw out as much blood as I could.

Hit them with Naturiffic Q-Salt this morning, then fired up the Vortex in the 26er.

Whipped up a batch of crostini

Made a quick salad of flat leaf parsley, shallots, capers, EVOO, lemon juice, and some S&P

Cooked the marrow bones in the 26er with small chunk of hickory over the Vortex

Whipped out that pecan/candied & spiced bacon smoked cream cheese thing from a couple of weeks ago

Oh, yes. I look forward to your future post with CINCHOUSE's reaction and thoughts on the deal.

FWIW - 3 bones like this were perfect for the 2.5 of us as a small family. Nothing leftover (except a few crostini that are rapidly disappearing into my daughter's mouth with the bacon/pecan/cream cheese spread on top).
