Picked up some single slabs of fresh spares this morning (in cryo's). Pack date was 3 days ago...it says "sell by" is June 10th.

Plan on cooking them one week from today (June 7th).

Leave the cryos in the fridge? Or freeze them for about 5 days and take them out Friday night/Saturday morning to thaw in the fridge?
 
I would leave them in the refrigerator. Chances are they were already frozen. Freezing them again might affect the meat and it's probably not necessary for that short a time.
