Thick T-Bone Pron

Bought a couple of these Tbones from SAMS awhile back. Let this sit on the counter for 45 mins and come to temp. I rubbed it w/ KOSMOS new Cow cover that he let me sample (this stuff is goooood) Cooked indirectly on the performer w/a lil mesquite at 275 or so. Brought temp of steak to 100. Got a hot fire of lump and did a reverse seer till internal was 130-135 or so, w/ a must have piece of garlic toast w/ the steak.

Brings tears to my eyes. Used to have them just like that almost twice a week with my dad. That is a thing of beauty.
