I'm fairly new to cooking 'cue, but not new to eating the tasty treat. I am from NC and closer to the foothills so I don't believe "real" NC BBQ is vinegar based, but must have tomato components to the sauce. I've always enjoyed cooking and feel like it's a mix of chemistry and art, both I enjoy. I graduated from vet school in 2012 and since have been working to finalize further training for public health.
I first got the bug by watching BBQ Pitmasters etc on tv. I started smoking by using a wood chip box on my Weber Q 320 and did pretty well, but wanted to compete so I bought a 22.5" WSM. My first competition is a backyard division in my hometown this June. Looking forward to the advice and camaraderie here on the forums.
