I got a 4lb money muscle sitting in my fridge left over from making pork roll today. I think I might want some of these!

So, the tacos tasted great! The pork was probably a bit overdone making the bark a bit tough on some of the smaller chunks. The IT snuck up on me and pulled them at about 205-210F. Will probably need a bit of moisture for reheating but the flavor is great!

The texture gave that typical carnitas crunchy yet tender feel without the whole frying in lard thing, which is a huge plus in my book. Excited to try it tonight (with a clean nose and palate) to really get a sense of how the flavor is with the mesquite smoke.
