The All New P-Fattie w/final result

I love Pastrami and after the success of my Pastrami Buffalo Turd (PBT) I thought I would give something else a try.

Started with a corned beef point. I soaked it in water for a couple of hours, changing the water every 30 minutes. It looked like this:

After partially freezing the corned beef I gave it a fine grind on my meat grinder.

I took the ground corned beef and made fatties out of it with Sonoma Cheese Company Habanero Jack.

One was rubbed with just plain ground pepper the other with lots of garlic powder and a pepper blend.

They are now on the UDS with apple wood...

great idea man! don't know if I've ever seen pastrami in the store out of point meat, so I guess you must have made the pastrami too?
