I guess I'll have to experiment with a spatchcocked turkey sometime soon. I have done it with chicken and the results were good. I'm not sure how happy I'd be with the sight of the spatchcocked turkey on the bar with the other food on Thanksgiving day. There's something about the look of that whole bird sitting there with the beautiful golden brown skin and steam rising up off the top that is just hard to pass up :)
