I was planning to make Pastrami and remembered one you did some time back so searched for it. I did find it and a link to Thirdeye's blog https://playingwithfireandsmoke.blogspot.com/1996/05/beef-pastrami.html

Looks darn good - I use third eyes pastrami recipe as well

I cured a chuck roast a few months ago - once it hit 170 or so - I wrapped in foil and some red ale - and smoked to 205 or so

Let it rest for an hour or so - and then pulled the meat for pulled pastrami chuck roast sandwiches on pretzel rolls - was very well received by my guest
 
Turned out Great Marc.

She had to make her adjustments and added more Garlic and jalapenos.
