St Louis is just a sub category of trimmed so you're safe to check trimmed ninja son.

I trim my own spares to st. louis cuts. I will also cook the rib tips and serve them with the racks. Any extra rib tips, I save and my dog gets them as treats.

Have my butcher trim them down & cook tips along with ribs. Tips usually go in the freezer for a winter time BBQ treat.

What he said. The riblet meat cooks faster. I pull it for beans, soups stews etc. Nothing goes to waste.
