I trim my own spares to st. louis cuts. I will also cook the rib tips and serve them with the racks. Any extra rib tips, I save and my dog gets them as treats.
 
Whole. Why waste all this moist goodness.

Have my butcher trim them down & cook tips along with ribs. Tips usually go in the freezer for a winter time BBQ treat.
