I've done that and it works for me.I've only cooked one t-trip, and I also am a drinking cook, I think our answer would be to identify muscle direction with a knife cut pre-cook. Just a thought!

Drinking and cookingOnly issue I have is I' am usually drinking when I cook and I always forget which way the meats running for the cut after cooking LOL. I pulled at 123 but it's hard to get consistent medium rare across tips due to their varying size in one piece of meat.
